- 250ml boiling water
- 1 tsp bicarbonate of soda
- 85g unsalted butter (softened)
- 140g caster sugar
- 2 large eggs
- 175g self-raising flour
- 1 tsp vanilla extract

*For the Toffee Sauce:*
- 175g light brown sugar
- 100g unsalted butter
- 225ml double cream
- 1 tsp vanilla extract.

 

Instructions:
1. *Prepare the Dates*: Chop the dates into small pieces and place them in a bowl. Add the boiling water and bicarbonate of soda, then set aside for 10 minutes.
   
2. *Make the Batter*: In a separate bowl, cream the butter and sugar until light and fluffy. Beat in the eggs one at a time, then fold in the flour and vanilla extract. Stir in the date mixture until well combined.

3. *Bake*: Pour the batter into a greased baking dish and bake at 180°C (160°C fan) for 35-40 minutes, or until a skewer comes out clean.

4. *Prepare the Toffee Sauce*: While the pudding bakes, melt the brown sugar, butter, and cream in a saucepan over medium heat. Stir until smooth, then add the vanilla extract.

5. *Serve*: Once the pudding is baked, pour half of the toffee sauce over the top. Serve warm with the remaining sauce and a scoop of vanilla ice cream or a dollop of clotted cream.
